I have a midi guitar pickup. How do I make my Windows laptop into a funky instrument I can use on stage?

I would go for Ableton Live. It's designed for on-the-fly arranging and sequencing, and would work well as a programmable processor. The fact that it supports most popular plug-in formats just makes it that much better.
